L.O.V.E.'s Roasted Cherry Tomatoes
¼ Cup of L.O.V.E.'s Manzanillo Olive Oil
1 lb. Fresh Cherry Tomatoes (kept whole)
4 Fresh Rosemary Sprigs
Fresh Cracked Pepper
Pre-heat the oven to 400˚. Rinse and thoroughly dry the cherry tomatoes. Add to a large bowl and drizzle with the Manzanillo Olive Oil. Chop the fresh Rosemary very fine & add to the bowl along with sufficient kosher salt and pepper to taste. Mix well until all of the tomatoes are coated. Pour the mix in a single layer onto a baking sheet and bake for 20-25 mins. They will pop and sizzle- let them get a little dark on top. Then carefully scoop them off with a spatula & place into a mason jar! Enjoy!
Use these to top fried eggs, fresh pasta, toast, or as a condiment on your sandwich! Store in a mason jar for up to a week in the fridge.
