L.O.V.E.'s
Wild Rice Salad
Ingredients:
1/3 Cup L.O.V.E's Hojiblanca Olive Oil
2 Tbsp. L.O.V.E's White Balsamic
1/2 Fresh Lemon, juiced
1 Cup Wild Rice, cooked & cooled
1 Cup Red Quinoa, cooked & cooled
1/2 Cup Cherry Tomatoes, halved
2/3 Cup Fresh Basil Leaves, chopped
1/2 Cup Feta Cheese Crumbles
Salt & Pepper
Instructions:
Place the first 3 ingredients into a large serving bowl. Whisk together until emulsified. Add the rest of the ingredients and stir gently until combined. Add salt & pepper to taste. Place in the fridge to chill over night. About one hour before serving, place on the table to come to room temperature. Enjoy!
